Add some coconut, coconut oil and cacao nibs to the mix and you really do have a delicious superfood powerhouse.
What amazed me even more than the amazing taste of this one, was how easy it is to make.
For the crust:
1 cup of almonds, (walnuts or 1/2 pistachios 1/2 almonds is ok)
1/2 cup dates, pitted and chopped
1/4 cup of shredded coconut
1/4 cup cacao nibs
For the Filling:
3 cups chopped cashews, soaked for at least 2 hours
2 cups of blueberries (if frozen allow to defrost)
1/2 cup of coconut nectar
3/4 cup coconut oil
Juice of 1 lemon
1 teaspoon of vanilla essence
2 tablepoons of Maqui berry powder
Cacao nibs to garnish
What to do:
Using coconut oil lightly grease a 20cm (8 inch) spring-form cake tin. Line the bottom of the tin with baking powder.
To make the crust, blend all of the crust ingredients in a food processor until well combined. Press the mixture evenly into the bottom of the tray. Refrigerate while you continue to prepare the filling.
To make the filling, gently melt the coconut oil (if required) over a low heat. Or place your jar of coconut oil in a pot of hot water until it is melted in the glass. Add the coconut oil to the food processor together with the cashew nuts, blue berries, coconut nectar, lemon juice, vanilla and maqui berry powder. Blend until smooth and adjust to taste.
Pour the berry filling mixture onto the crust. Lightly tap the tin on a firm surface to remove any small air bubbles.
Place in the freezer until firm. Remove the whole cake from the pan while frozen and place on a serving platter.
Defrost in the refrigerator.
