Raw Apricot, Pecan & Caramel Crunchy Bliss Balls

1/2 cup pecans (activated if available)
1/2 cup desiccated coconut
1/2 cup almond meal (or 3/4 cup whole almonds)
2 tbsp lucuma powder
10 dried apricots (organic) + 5 dried apricots chopped into small cubes
5 soft medjool dates
1 tbsp nut butter (I used almond butter)
2 tbsp coconut nectar
2 tbsp coconut water (or filtered water)
2 tbsp coconut oil, melted
1/4 cup dried or activated buckwheat (not raw) (also optional, replace with 1/4 cup of almond chunks)
1/4 - 1/3 cup desiccated coconut to roll the bliss balls into
Pinch of pink salt

What To Do:

Blend together the pecans, coconut and almond meal until the pecans are broken down into smaller chunks and the ingredients are mixed well. Add in the lucuma powder and a pinch of salt (1/8 tsp) and blend again for 10 seconds to incorporate both ingredients. Remove from the food processor/blender and place into a large bowl.

Blend together the apricots, dates, nut butter and coconut nectar until both the dried apricots and medjool dates start to form a paste. You can either remove the mixture at this point and mix in with the dry ingredients, or blend in the coconut water and oil before removing (I removed them before adding the water and oil).

Use a tablespoon or any mixing spoon you prefer to fold in the wet ingredients into the dry, and keep folding it in (you can use your hands) until there’s no dry ingredients noticeable in the mixture, and it’s stuck together. Pour the melted coconut oil and coconut water on top and mix them in well.

Optional to add in the buckwheat, blend for 10-20 or leave them as they are, and press the buckwheat, along with the 5 chopped apricots into the mixture, folding the mixture over to make sure it’s incorporated into it evenly.

Scoop mixture with the tablespoon and make the balls with a heaped tablespoon worth of mixture. Roll into balls. This makes approximately 17-18 balls. In a small bowl, put the desiccated coconut in to the roll the bliss balls into it and cover them completely before storing in a container.

They will stay fresh for 7 days in the fridge, or place in the freezer for them to last longer!
