Ingredients:
1 can of chickpeas, drained
1/4 cup of oats
1/8 cup of pepitas
1 medium carrot – shredded
2 cloves of garlic – minced
2 tblsp chopped cilantro
1 tblsp tahini unhulled
4 tblsp virgin coconut oil
1/2 tsp sea salt
1/4 tsp chili powder
1/8 tsp cayenne
1/8 tsp red pepper flakes
1/8 tsp cumin
Optional:
4 collard green leaves
2 avocados – mashed
1 tomato – sliced
What to do:
In a food processor, combine oats and pepitas and process until flour-ish. Then add chickpeas and pulse.
Next, add the mixture to a medium bowl and combine all of the other ingredients. Include 1 tblsp of coconut oil. Use your hands to mix everything thoroughly.
Wet hands and form 4 patties.
Heat the other 3 tblsp of coconut oil in a shallow fry pan. Cook the patties in the fry pan until crisp and brown.
