1 very large sweet potato
1 or 2 small white potato’s
3 x tblsp of Virgin Coconut Oil
Pinch of himalayan sea salt
What to do:
Boil all potatoes together in a large pot until they are soft enough to mash.When ready drain the water out add coconut oil until the mash is nice, soft and creamy. Continue to add more coconut oil if desired.
Notes and Options:
Add some coconut cream or milk for a more creamy consistency ‘dairy like’ consistency.
Serve and eat with a large green salad, made with avocado and using a good quality extra virgin olive oil or flaxeed oil as your dressing. This will make the entire meal a great source and good combination of healthy fats.
