This is so simple to make and totally delicious. It can be enjoyed as a creamy dressing for many different kinds of salads or as a vegetable dip.
1 cup raw cashew nuts (soaked 2 -3 hrs )
Juice of 1/2 large lemon
1 tsp dried dill
1/4 tsp salt (or to taste)
Pinch of black pepper
1 cup clean water
NB: For a garlic aioli kind of flavour add 2 cloves of garlic to the blend.
Garlic is a very strong medicinal food with antiviral properties that can give your system a good clean out.
What to do:
1. Rinse and drain soaked cashews
2. Place all ingredients with 1/2 cup of water in a high speed blender, or blender of your choice
3. Add the remainder of the water in parts to achieve a nice thick creamy 'mayonnaise like' consistency.
