3 cups fresh parsley
1cup fresh mint leaves
1 tomato chopped into small pieces
1cup hemp seeds
1 small red onion chopped finely
2 tbs olive oil or MCT oil
2 tbs lemon juice or coconut cider vinegar
¼ tsp Himalayan salt, or to taste
Optional: A generous sprinkle of dulse flakes
NB: if you don’t like raw sweet potato you can replace this with grated carrot.
What To Do
Process the parsley, mint and slat in a food processor until minced.
Transfer to a large mixing bowl.
Add the tomatoes, hemp seeds, onion, oil and coconut vinegar. Mix all ingredients together well.
