Makes 4 Serves
¼ of a red cabbage shredded
1 cos lettuce shredded
2 medium apples grated
2 spring onions, thinly sliced
3 tablespoons of Liquid Coconut Oil
1¼ teaspoon of Dijon mustard
1 teaspoon Coconut Flower Nectar
3 tablespoons Coconut Cider Vinegar
Pinch of Himalayan Salt
½ cup of Pepitas (Pumpkin Seeds)
What to do:
Combine the cabbage, lettuce, apple, and spring onions in a bowl.
In a small jar place the Liquid Coconut Oil, Coconut Cider Vinegar, Coconut Flower Nectar, Dijon Mustard, and Salt. Place the lid on the jar and shake until all ingredients are combined.
Pour over the salad and garnish with Pepitas!
This is a really crispy and fresh salad that can be made as a side or as a meal!
