Coconut Gingerbread Cookies

Magic Ingredients:

2 cups of almond meal

3 tbs virgin coconut oil

3 tbs coconut flower nectar

4 tbs desiccated coconut

1 pinch of baking soda

1 tsp cinnamon

1 tsp nutmeg

1 tbs ground ginger

What to do:

Pre-heat oven to 180 degrees.

Mix all ingredients together in a bowl. Stir well until combined. You can use a food processor to combine. Roll mixture into small bowls and place on a baking tray, with baking paper OR greased with coconut oil. Squash the balls with your hand to flatten them into cookie shapes.

Bake in the oven for about 10 minutes.

Notes and Options:

Add some raw cacao nibs for a hint of crunchie chocolate.

Enjoy this healthy and delicious sweet treat with a cup of warm herbal tea, or with a freshly squeezed apple and pineapple juice.
