Vegan, Paleo, Dairy, Soy, and Gluten Free
These are a gorgeous variation of the common bliss ball and are sweetened using dates and high-anxtioxidant Apricots. The slight tartness of the apricots is offset by the sweetness of the freshly scraped vanilla beans. You can alternate seeds and fruits (e.g., use cashews or pecans instead of almonds, goji berries instead of apricots) to find your favourite combination. The kids will love getting involved in the preparation of these. Another bonus is that once made, these bliss balls are so versatile - they make the perfect healthy lunch box or after dinner treat.

Total Prep/Cook Time: 10-15 minutes
Magical Ingredients:
- 1/2 cup organic desiccated coconut
- 1/4 cup extra desiccated coconut for rolling
- 2 cups organic activated plain almonds
- 1 cup of sun dried organic pitted apricots, roughly chopped
- Contents of 1 scrapped vanilla pod
- 8 large organic Medjool dates, pitted
- 1 tbsp organic coconut oil
- Optional: 1/2 tsp finely grated ginger
What to do:
1. In a food processor grind the almonds to a fine meal
2. Add 1/2 the dried apricots, ginger (optional) and vanilla and continue to blend until fine
3. Add the dates, one at a time, and coconut oil and continue to process
4. Add the blended mixture to a bowl and mix in the 1/2 cup of desiccated coconut & remaining apricot
chunks
5. Roll into balls using your hands (the kids love this part) and roll the balls into the extra desiccated
coconut to coat note: if the mixture is too dry to roll by hand then add more coconut oil
6. Refrigerate for at least 30 minutes before serving
- These will keep in an airtight container in the fridge for up to one week.
