Chocolaty goodness with a hint of natural sweetness from blueberries, mulberries, and coconut flower nectar, these bites are ready to eat as soon as you make them and straight out of the fridge. The high calcium content of the silken tofu, and the antioxidants from the delicious combination of berries make these bites not only a delicious snack, but also incredibly nutritious.
Raw, Vegan, Low GI, Gluten & Refined Sugar Free
Makes: approximately 9, 25g bites
Level of Difficulty: Easy
Time Taken: 15 minutes
Magical Ingredients:
- ¼ c (40g) dried blueberries
- 2 tbsp chia seeds
- 1 tsp coconut flower nectar
- 5 (30g) dried dates, chopped
- 10g dried white mulberries
- 1 tsp organic vanilla bean paste
- 1 tbsp raw cacao powder
- 1/4 cup desiccated coconut
- 1/4 cup coconut flour
- 1 tsp coconut sugar
- 1 tbsp (30g) organic silken tofu
- 2tbsp (40ml) plant-based milk of choice (almond, coconut), or water
Additional: desiccated coconut for rolling
What to do:
1. Combine all your ingredients to a food processor and pulse until well combined. This won’t take long, you want the berries to retain some texture.
2. Roll the mixture, using your hands, into 9 bites and roll through the extra desiccated coconut
3. Store in the fridge for 30 minutes until ready to consume
