Ingredients:
1 cup raw cashews (soaked for 1-2 hours)
1/2 cup raw cacao powder
1/3 cup coconut nectar
1/4 cup coconut oil
1 teaspoon pure vanilla extract
1/4 cup raw cacao nibs
What to do:
Drain and rinse the cashew. Place the cashews, coconut oil, coconut flower nectar, vanilla, cacao powder and salt into a food processor and pulse until smooth and creamy. Stop every now and then to scrape the sides of the bowl. Transfer the mixture into a medium-size bowl and stir in the 3/4 of the cacao nibs until they are well combined and evenly distributed.
Place a piece of waxed baking paper over a flat plate. Using your hands and a knife makes rectangle-shaped pieces of fudge from the mixture. Place each piece on top of the baking paper tray until all the mixture has been used up.
Place another piece of baking paper carefully over the top of the pieces. Freeze until solid, 3 to 4 hours.
Remove from the freezer and lift the frozen fudge from the fridge, using the waxed paper. Keep frozen.
