The base
10 x dates pitted and soaked for 4 hours
¼ cup flax seeds
¼ cup sunflower seeds
1 tablespoon maca powder
2 tablespoons cacao powder
¼ teaspoon vanilla bean powder
What to do: Put all ingredients into a food processor until it is all combined into a ball.
Press the mixture into a lined pan and set aside
The centre
1 cup of shredded unsweetened coconut
6 tablespoons coconut oil
¼ cup frozen cherries
1 tablespoon coconut nectar
What to do: Process all ingredients until well combined.
Place this cherry coconut on top of the base as the second layer, press down.
The chocolate topping
½ cup cacao powder
4 tablespoons coconut oil
2 teaspoons coconut nectar
1 pinch vanilla bean powder
What to do: Spread the topping over the top of the coconut cherry centre, place in the fridge for a few minutes before slicing into narrow pieces.
