The delicious, Strawberry Panna Cotta is quick and easy to make and uses Agar Agar, an algae which can be used as a vegetarian alternative to gelatine. Sweetened naturally with coconut nectar, everyone in the household will love this!

Ingredients:
- 375ml organic coconut milk
- ½ scrapped contents of a vanilla pod
- 1 tbsp Agar Agar flakes or powder (Vegan gelatin substitute - you can find this from any health food
store or use Irish Moss Gel)
- 1/4 cup strawberries, washed and cut lengthways
- 1 tbsp coconut magic flower nectar
- Option: sprigs of mint & raw cacao nibs, and/or organic coconut flakes to garnish
Method:
1. Place the coconut milk and agar agar in a medium-sized saucepan and allow to sit for 15 minutes
2. Add the vanilla bean contents and flower nectar and whisk the mixture continuously over medium-low heat until the agar agar has dissolved (about 5 minutes for powder and 15 minutes for flakes)
3. Remove from the heat and allow to cool for about 1 minute
4. First place a few of the sliced strawberries around the edges, then pour the mixture into pudding molds (you can find these at most discount and kitchen stores)
5. Place the molds in the fridge for at least 1 hour or until set
6. Remove the panna cottas from the fridge, place on a plate and garnish with sprigs of mint and/or raw cacao nibs
