The coconut nectar sweetens this peach smoothie recipe, while the orange gives it a summer twang. Extremely refreshing and delicious!
2 tsp coconut nectar
1 cup coconut water
1 orange, juiced
2 tbsp coconut yoghurt - can be replaced with 2 tbsp coconut cream, or 1 tbsp cashew butter
1/4 tsp cinnamon
1/4 tsp vanilla extract
1 tbsp chia seeds
2 cups of ice
1 cup frozen berries (raspberry and strawberry)
Extra berries & chia seeds for toppings
1/2 of a raspberry raw energy bar chopped into 1cm cubes to place on top
What to do:
1. Add all ingredients into blender minus the berries and chia seeds, and blend until it reaches a smooth consistency.
2. Remove half of the smoothie and pour into the glass you're using. Stir in the chia seeds.
3. Blend the frozen berries in the blender, and add a touch of coconut water to get a thinner consistency if you prefer.
4. Pour the berry layer on top of the smoothie and slightly stir it in to get a blended look.
5. Layer on the toppings.
