Magic Ingredients:
1 cup coconut flour
1 cup almond meal
4-5 dates
1/2 cup cacao powder
2 tablespoons cacao nibs
3 ripe bananas
2 teaspoons baking powder
1/2 teaspoon vanilla essence
1/2 teaspoon pink salt
1 cup almond milk
1 tablespoon melted coconut oil
Optional:
1 handful of organic goji berries for a superfood blast, they go really well in the mix.
If you like very sweet kind of muffins you can add 2-4 tablespoons of coconut nectar. I just found that the dates and bananas made this naturally sweet already.
What to do:
Preheat oven to 200°C. Line a small muffin tray with coconut oil.
Add dates, bananas, vanilla essence, cacao powder and almond meal to the food processor and process until they achieve a nice smooth consistency.
Put all ingredients from the food processor into a bowl. Add almond milk, coconut flour, salt and cacao nibs. Mix all ingredients together well.
Cook for 25-30 min.
When you take these muffin balls out of the oven and they are nice and warm you can butter them with a dollop of coconut oil or eat them just as they are straight from the tray.
They will last a few days kept in a sealed container. Enjoy!
