I have chosen a few exotic and deliciously healthy recipes from Ronaldo's book, Ronaldo's Kitchen, to share with you.
What I love most about Ronaldo's work is his nutritional awareness and expertise that is so uniquely combined with his training as a chef! Ronaldo has an open mind when it comes to tradition, culture and health. This really brings to use Worldy wisdom and value when it comes to food preparation, staying healthy and slim.

"This is a must for coconut lovers. A chef friend of mine created this healthy, simple and delicious recipe based on a dessert called panacotta. I teach this in almost every cooking class that I have and everybody loves it. You can't go wrong with coconut!
Ingredients
1 tin of organic coconut cream
1 tin of water (use the empty tin)
1 cup of Xylitol or coconut nectar or any natural sweetener
500ml organic soy or almond milk or another 500ml of coconut cream
1 teaspoon natural vanilla extract
1 teaspoon of gelatin powder
2-4 tablespoons of chia seeds
How to do it
Bring the coconut cream and soy milk to the boil for 5 minutes with the vanilla to bring out the flavour and the aroma.
Dissolve the gelatine in half a tea cup of hot water.
Add the natural sweetener, chia seeds and gelatine to the mixture and turn the heat off. Whisk well.
Pour into individual cups or dessert glasses. Serve with fresh fruits, berries or berry chia sauce (see recipe on page 106)
